Ingredients
1 1/2 cups (250g) sugar
1/4 cup (56g) butter
1 pineapple, peeled and sliced into rounds
1 litre coconut ice cream
1/4 cup (56g) butter
1 pineapple, peeled and sliced into rounds
1 litre coconut ice cream
Where to find ingredients
Sugar and butter are readily available in all Ghanaian supermarkets and local markets.
Pineapple is a staple fruit, easily found in Ghanaian markets and grocery stores. Look for ripe, sweet pineapples for the best flavour.
Coconut ice cream can be found in larger supermarkets, especially those with an international or frozen dessert section. If you can't find it, a good quality vanilla ice cream can be used as a substitute, though it will alter the distinct coconut flavour.

Preparation method
- In a large frying pan, heat the sugar and butter over high heat, stirring until a golden caramel forms
- Pour the caramel into a bowl. Dip each pineapple slice into the caramel, ensuring they are well coated on both sides
- Lightly grease a loaf tin (approximately 28x12cm) with a little oil
- Arrange the caramelised pineapple slices to line the bottom and sides of the tin, placing them neatly side-by-side
- Spoon the coconut ice cream into the tin, filling all the available space
- Top with the remaining caramelised pineapple slices
- Freeze for about six hours, or until the ice cream is completely firm
- Before serving, unmould the ice cream and let it sit for about 15 minutes. This allows it to reach that perfect creamy consistency for slicing
Observations
A chilled and elegant dessert, perfect for finishing summer lunches. The blend of caramel, tart fruit, and coconut ice cream creates a flawless balance of flavours.
