Method
- Peel the onion and chop it into very small pieces
- Place the water in a kettle and bring it to a boil over low heat
- Heat a medium saucepan over low heat
- Add the olive oil and chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion is soft
- Add the bay leaf and the rice to the pan
- Stir for approximately 1 minute so the grains are coated in oil
- This helps ensure a fluffy result
- Measure 2 cups of the boiling water and pour it over the rice
- Season with the remaining salt and stir
- Increase the heat to medium
- Avoid stirring from this point on
- Wait for the water to evaporate until it reaches the level of the grains
- Reduce the heat and cover the pan partially
- Cook until all the water is absorbed
- Check the bottom of the pan with a fork to confirm that the water has fully evaporated
- Turn off the heat
- Add the lemon zest
- Cover the pan completely
- Let the rice steam and rest for 5 minutes
- Use a fork to fluff the grains and incorporate the zest
- Transfer to a bowl and serve immediately
