1/2 onion

Method

  1. Peel the onion and chop it into very small pieces
  2. Place the water in a kettle and bring it to a boil over low heat
  3. Heat a medium saucepan over low heat
  4. Add the olive oil and chopped onion
  5. Season with a pinch of salt
  6. Sauté for about 2 minutes until the onion is soft
  7. Add the bay leaf and the rice to the pan
  8. Stir for approximately 1 minute so the grains are coated in oil
  9. This helps ensure a fluffy result
  10. Measure 2 cups of the boiling water and pour it over the rice
  11. Season with the remaining salt and stir
  12. Increase the heat to medium
  13. Avoid stirring from this point on
  14. Wait for the water to evaporate until it reaches the level of the grains
  15. Reduce the heat and cover the pan partially
  16. Cook until all the water is absorbed
  17. Check the bottom of the pan with a fork to confirm that the water has fully evaporated
  18. Turn off the heat
  19. Add the lemon zest
  20. Cover the pan completely
  21. Let the rice steam and rest for 5 minutes
  22. Use a fork to fluff the grains and incorporate the zest
  23. Transfer to a bowl and serve immediately
