Fresh sweet corn with husks can typically be found at local farmers' markets or the produce section of large grocery stores. Grated coconut is available in the baking aisle or the international foods section.
Preparation method
- Carefully remove the husks from the corn cobs and set them aside to use as wrappers
- Grate the corn kernels or cut them close to the cob
- Blend the corn kernels with the water in a blender until smooth
- Add the coconut, sugar, and salt to the corn mixture
- Stir everything together well
- Form the husks into small pouches or pockets
- Fill each husk with the corn mixture and tie them securely with kitchen twine or thin strips of corn husk
- Bring a large pot of water to a rolling boil
- Gently drop the pamonhas into the boiling water one by one
- Ensure the water is at a constant boil before adding the pamonhas to prevent them from falling apart
- Cook for approximately 40 minutes
- Remove the pamonhas carefully using a slotted spoon
- Allow them to cool in a cool place before serving
Observations
Serve warm with a cup of coffee.
