Ingredients
12 ears of fresh corn (keep the husks)
1 cup water
2 cups sugar
1 cup finely grated coconut
1 pinch of salt
1 cup water
2 cups sugar
1 cup finely grated coconut
1 pinch of salt
Where to find ingredients
You can find fresh ears of corn with husks at local farmers' markets or the produce section of well-stocked supermarkets during harvest season. Grated coconut can be found in the baking or international foods aisle.
Preparation method
- Carefully remove the corn husks and set them aside to use as wrappers
- Cut the corn kernels off the cob
- Place the kernels and the water into a blender
- Blend until you have a smooth consistency
- Add the grated coconut, sugar, and salt to the mixture
- Stir well to combine
- Prepare the corn husks to create small pouches
- Spoon the corn mixture into the husks and tie them securely with kitchen twine or thin strips of husk
- Bring a large pot of water to a rolling boil
- Carefully drop the wrapped corn parcels into the boiling water one by one
- Ensure the water remains at a rolling boil to prevent the parcels from falling apart
- Cook for approximately 40 minutes
- Remove the corn parcels from the pot using a slotted spoon
- Place them in a cool area to set and cool down completely
