Ingredients

12 ears of fresh corn (keep the husks)
1 cup water
2 cups sugar
1 cup finely grated coconut
1 pinch of salt

Preparation method

  1. Carefully remove the corn husks and set them aside to use as wrappers
  2. Cut the corn kernels off the cob
  3. Place the kernels and the water into a blender
  4. Blend until you have a smooth consistency
  5. Add the grated coconut, sugar, and salt to the mixture
  6. Stir well to combine
  7. Prepare the corn husks to create small pouches
  8. Spoon the corn mixture into the husks and tie them securely with kitchen twine or thin strips of husk
  9. Bring a large pot of water to a rolling boil
  10. Carefully drop the wrapped corn parcels into the boiling water one by one
  11. Ensure the water remains at a rolling boil to prevent the parcels from falling apart
  12. Cook for approximately 40 minutes
  13. Remove the corn parcels from the pot using a slotted spoon
  14. Place them in a cool area to set and cool down completely

Observations

Serve warm or at room temperature with a fresh cup of coffee.
