Where to find ingredients
Ground beef, onions, garlic, tomatoes, salt, pepper, and fresh herbs can be found at most grocery stores and local markets. Oil is also readily available at these locations.
Preparation method
- Heat the oil in a skillet over medium heat
- Sauté the onion and garlic until they begin to lightly brown
- Add the ground beef to the skillet
- Stir continuously to break up clumps and allow the meat to brown evenly
- Add the chopped tomato to the mixture
- Cook, stirring occasionally, until all the moisture from the preparation has completely evaporated
- Season with salt and black pepper, adjusting to your taste
- Turn off the heat and mix in the chopped fresh herbs
- Let the filling cool completely before filling the pastries to ensure the dough remains intact
Observations
The main goal for this filling is to keep it very dry, preventing excess moisture from the meat from compromising the crispiness of the pastry dough when frying. The secret is to sauté the mixture until all the liquid has completely evaporated before finishing the preparation.
