1 small tin extra virgin olive oil
2 medium onions, finely diced
4 tomatoes, peeled, seeded, and chopped
1 ½ tablespoons annatto powder
1 carton (520 g) tomato sauce with herbs (basil/parsley)
2 tablespoons beef-style bouillon powder
15 fresh basil leaves, chopped
200 g butter
250 g requeijão cremoso (Brazilian cream cheese)
1 tin (approx. 300 ml) heavy cream
2 tablespoons cornstarch
2 bunches fresh cilantro, chopped
2 bunches fresh spring onions, chopped

If unavailable, a mild, high-quality spreadable cream cheese mixed with a little heavy cream is the closest substitute, though the original product provides the authentic texture.
Preparation method
- Clean the shrimp thoroughly and marinate in lemon juice and salt for about 20 minutes
- Rinse the shrimp well and drain them completely
- In a large pan or Dutch oven, sauté the minced garlic in olive oil until fragrant
- Add the diced onions, annatto powder, and chopped tomatoes
- Cook over medium heat until the onions have softened
- Stir in the tomato sauce, beef bouillon, and chopped basil
- Add the butter and the prepared shrimp to the pan
- Simmer on low heat for approximately 30 minutes, stirring occasionally
- Add the requeijão cremoso and cook for about 10 minutes, stirring until the sauce thickens
- If needed, dissolve the cornstarch in a little of the sauce liquid and add to the pot, cooking for another 3 minutes
- Stir in the chopped cilantro and spring onions
- Turn off the heat and fold in the heavy cream
- Gently stir until you achieve a smooth, homogeneous creamy consistency
