Preparation method
- Peel the potatoes and place them in a pot with water
- Bring to a boil over high heat
- Add salt and cook for approximately 20 minutes or until tender
- Drain all the water and mash the potatoes with a masher
- Stir in the butter and egg yolks into the mashed potatoes
- Season with salt, black pepper, and nutmeg, stirring to incorporate the flavors
- Transfer the mixture to a piping bag fitted with a large star tip
- Preheat the oven to 180°C (350°F)
- Grease a baking sheet with butter and dust with all-purpose flour
- Pipe potato roses onto the baking sheet by pressing the piping bag
- Start the movement in the center and make a spiral circle to form the rose
- Leave space between each portion on the baking sheet
- Bake in the preheated oven for about 30 minutes or until the surface is lightly golden
- Remove from the oven and serve immediately
