Preparation method
- Wash the corn ears thoroughly and remove all silk
- Cut the kernels off the ears with the help of a knife and reserve in a bowl
- Place the corn kernels and milk in a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the pulp
- Transfer the liquid to a saucepan and bring to low heat
- Stir constantly until thickened to prevent lumps from forming
- Transfer the cream to an oven-safe dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with lightly floured hands
- Shape the dough into long cylinder shapes on a floured surface
- Cut the cylinders into small pieces, in the traditional gnocchi size
- Cook the pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and arrange in a serving dish
- Cover with your preferred sauce
- Finish by sprinkling grated Parmesan cheese on top
- Place in the oven just long enough to get golden and bubbly
