Ingredients

6 ears of corn
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese

Preparation method

  1. Wash the corn ears thoroughly and remove all silk
  2. Cut the kernels off the cobs with a knife and set aside in a bowl
  3. Place the corn kernels and milk in a blender
  4. Blend the mixture well
  5. Add the all-purpose flour to the blender
  6. Blend again to incorporate
  7. Pass the mixture through a fine-mesh sieve to remove the pulp
  8. Transfer the liquid to a saucepan and place over low heat
  9. Stir constantly until thickened to prevent lumps
  10. Transfer the cream to an ovenproof dish and let it cool completely
  11. Mix the egg yolk into the cooled dough
  12. Work the dough with lightly floured hands
  13. Shape the dough into long cylinders on a lightly floured surface
  14. Cut the cylinders into small pieces, the traditional gnocchi size
  15. Cook the pieces in boiling water until they float to the surface
  16. Remove the gnocchi from the water and arrange in a serving dish
  17. Cover with your preferred sauce
  18. Finish by sprinkling grated Parmesan cheese on top
  19. Place in the oven just long enough to gratinate and brown
