Preparation method
- Cook the rice in salted water until very soft
- Drain excess water if any
- In a blender, blend the cooked rice with the egg, parsley, cilantro, and chopped chives until homogeneous
- Transfer the mixture to a pot
- Gradually add the wheat flour, mixing
- Place the pot over low heat, cooking the dough while stirring constantly until it completely pulls away from the bottom of the pot, forming a ball
- Season with salt to taste
- Remove the dough from the pot and let it cool slightly
- On a clean, lightly floured surface, shape the dough into a roulade about 2 cm in diameter
- Cut the gnocchi into pieces approximately 2 cm long
- In a large pot, boil plenty of salted water with about 4 tablespoons of oil
- Add the gnocchi to the boiling water gradually, so they don't stick
- Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked
- Drain the cooked gnocchi, and if desired, finish by sautéing them in a pan with the remaining vegetable oil or serve directly with your favorite sauce
