Ingredients
6 ears of corn
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (peeled)
Shredded Parmesan cheese
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (peeled)
Shredded Parmesan cheese
Where to find ingredients
Corn kernels can be found in the produce section of most supermarkets. If fresh corn on the cob is out of season, frozen corn kernels are a suitable substitute and can be found in the frozen food aisle. All-purpose flour and milk are standard staples available in any grocery store. Egg yolks can be separated from eggs found in the dairy section. Shredded Parmesan cheese is available in the dairy or cheese section of most supermarkets. For a more authentic Brazilian experience, look for specialty ingredients at Latin or Brazilian markets.
Preparation method
- Wash the corn ears well and remove all silks
- Cut the kernels off the ears with a knife and set aside in a bowl
- Place the corn kernels and milk in a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the pulp
- Transfer the liquid to a saucepan and bring to low heat
- Stir constantly until thickened to prevent lumps from forming
- Transfer the cream to an oven-safe dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with hands lightly greased with all-purpose flour
- Shape the dough into long cylinders on a surface dusted with flour
- Cut the cylinders into small pieces, the traditional gnocchi size
- Cook the pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and arrange them on a serving dish
- Cover with your preferred sauce
- Finish by sprinkling shredded Parmesan cheese on top
- Place in the oven just long enough to melt and brown
Observations
This recipe uses fresh corn to create a light and delicious dough. The secret is constant stirring to reach the ideal dough consistency before shaping and finishing in the oven.
