Traditional Galinhada (Galinhada)

Ingredients

1 whole chicken cut into medium pieces
4 tbsp oil or olive oil
Salt to taste
Black pepper to taste
1 large onion, chopped
3 cloves garlic, chopped
1/2 green bell pepper, chopped (optional)
2 tomatoes, peeled, seeded, and chopped
1/2 tsp turmeric powder or 2 sachets of ready-made powdered seasoning with turmeric
2 cups rice
4 cups hot water
1/4 cup chopped fresh herbs (parsley and spring onions)

Where to find ingredients

Look for the chicken, rice, and fresh herbs at the meat counter, rice aisle, and produce section of your local supermarket or market. Turmeric or seasoned powder with turmeric can be found in the spice section.

Preparation method

  1. Season the chicken pieces with salt and black pepper to taste
  2. In a large pot, heat the oil or olive oil over medium heat
  3. Brown the chicken pieces on all sides
  4. Remove the chicken from the pot and set aside
  5. In the same pot, add the chopped onion and sauté until translucent
  6. Add the chopped garlic and chopped green bell pepper (if using) and sauté for another 2 minutes
  7. Add the chopped tomatoes and cook until they begin to break down
  8. Add the turmeric powder or ready-made seasoning, and mix well
  9. Return the chicken pieces to the pot and mix them with the sautéed base
  10. Add the rice and mix well, coating the grains in the sautéed base for about 1 minute
  11. Pour the hot water into the pot and adjust the salt if needed
  12. As soon as it comes to a boil, lower the heat, cover the pot, and cook for about 15 to 20 minutes, or until the rice is cooked and the water has been absorbed
  13. Check that the chicken is fully cooked
  14. Turn off the heat and stir in the chopped fresh herbs
  15. Let the galinhada rest, covered, for 5 minutes before serving
