Traditional Cuscuz Paulista: Easy Homemade Recipe (Cuscuz paulista receita)

Ingredients

1/2 cup vegetable oil
8 ripe tomatoes, peeled, deseeded and chopped
2 ripe tomatoes, thinly sliced for decoration
1 small green capsicum, finely diced
1 small red capsicum, finely diced
1 can sweet corn, drained
1 can green peas, drained
1 can hearts of palm, chopped
2 hard-boiled eggs, roughly chopped
2 hard-boiled eggs, sliced for decoration
2 cans sardines, drained, bones removed and flaked
4 tbsp chopped fresh parsley and spring onions
6 vegetable or chicken stock cubes
4 cups fine cornmeal (maize flour)
2 tbsp fine cassava flour (manioc flour)
1 red chilli, minced, or hot sauce to taste
Black olives, for decoration

Where to find ingredients

You can find fine cornmeal and cassava flour in the 'International' or 'Latin American' aisle of your local supermarket (like Countdown or Pak'nSave) or at specialty grocers. Sardines and hearts of palm are commonly stocked in the canned food section.

Preparation method

  1. Prepare the mould: line the bottom and sides of a pudding or ring cake tin with tomato slices, boiled egg slices, and a few sardine fillets to create the decorative layer.
  2. Sauté the aromatics: heat the vegetable oil in a large pot and sauté the 8 chopped tomatoes and the diced capsicums until they soften.
  3. Add the fillings: stir in the chopped hearts of palm, peas, corn, chopped boiled eggs, flaked sardines, and the minced chilli.
  4. Make the stock: dissolve the 6 stock cubes in 4 cups of boiling water and pour this over the ingredients in the pot. Bring to a boil and simmer for a few minutes.
  5. Incorporate the flours: gradually fold in the fine cornmeal and the cassava flour, stirring constantly to prevent lumps, until you achieve a firm and uniform mixture.
  6. Cook the base: continue cooking and stirring for 5 to 10 minutes until the mixture thickens significantly and pulls away from the bottom of the pot.
  7. Assemble the mould: carefully spoon the mixture into the prepared tin, using a spatula to smooth the surface and gently pack it down.
  8. Unmould and serve: allow the cuscuz to cool until lukewarm, then carefully invert it onto a serving plate. Garnish with black olives and serve immediately.
