Where to find ingredients
All-purpose flour, salt, cooking oil, white vinegar, and water can be found at most grocery stores. Lard may be available at butcher shops or specialty food stores.
Preparation method
- In a large bowl, mix the all-purpose flour and salt
- Make a well in the center of the flour
- Add the oil or lard along with the vinegar
- Gradually pour in the warm water
- Incorporate the ingredients with your hands until the dough no longer sticks to your fingers
- Transfer the dough to a smooth surface
- Knead vigorously until it is very soft and homogeneous
- If the dough seems too hard, add just a few drops of water
- If you notice it sticking, sprinkle a little more flour
- Cover the dough with a clean cloth
- Let it rest for 20 minutes
- Roll out the dough until very thin
- Cut into desired sizes and shapes
- Distribute your preferred filling over the pieces
- Press the edges firmly to seal and prevent them from opening during frying
- Deep-fry in hot oil until golden brown
- Remove excess oil and serve immediately
Observations
If you want to make your pastels super crispy and not greasy, the key is to knead the dough well and roll it out very thin before frying.
