Where to find ingredients
All-purpose flour, salt, vegetable oil, white vinegar, and water can be found in most supermarkets. Lard may be found in specialty stores or larger grocery stores.
Preparation method
- Mix the flour and salt in a large bowl
- Make a well in the center of the flour
- Add the oil or lard along with the vinegar
- Gradually pour in the warm water
- Incorporate the ingredients with your hands until the dough pulls away from your fingers
- Transfer the dough to a smooth surface
- Knead vigorously until it is very soft and homogeneous
- If the dough seems too hard, add only a few drops of water
- If you notice it's sticking, sprinkle a little more flour
- Cover the dough with a clean cloth
- Let it rest for 20 minutes
- Roll out the dough very thinly
- Cut into your desired sizes and shapes
- Distribute your preferred filling over the pieces
- Press the edges firmly to seal and prevent them from opening during frying
- Deep-fry in hot oil until golden brown
- Drain off excess oil and serve immediately
Observations
If you want to make your pastéis extra crispy and without excess oil, the key is to knead the dough well and roll it out very thinly before frying.
