1 zucchini

Preparation
- Wash the zucchini skin well under running water using a vegetable brush
- Dry with a clean kitchen towel
- Trim and discard the ends
- Cut the zucchini crosswise to separate the thicker part from the thinner end
- Slice the thick part in half lengthwise and cut each half into three strips to create batons
- Divide the thin part in half crosswise so that all pieces are similar in size
- Cut each of these pieces into four parts
- Heat a non-stick skillet over medium heat
- Add a drizzle of olive oil and arrange the zucchini pieces with the cut side facing down
- Sear for about 2 minutes until golden
- Lightly crush the coriander seeds in a mortar and pestle to release the aroma
- Flip the batons with the help of tongs to brown the opposite side
- Add the coriander seeds
- Season with salt
- Add a little more olive oil
- Sauté for 1 more minute until the zucchini is tender and seasoned
- Finish by turning off the heat and incorporating the lemon juice
- Serve immediately
