Grilled Zucchini with Lemon

Ingredients

1 zucchini
Azeite a gosto (Olive oil to taste)
1/2 colher (chá) de sementes de coentro (1/2 tsp coriander seeds)
Sal a gosto (Salt to taste)

Preparation

  1. Wash the zucchini skin well under running water using a vegetable brush
  2. Dry with a clean kitchen towel
  3. Trim and discard the ends
  4. Cut the zucchini crosswise to separate the thicker part from the thinner end
  5. Slice the thick part in half lengthwise and cut each half into three strips to create batons
  6. Divide the thin part in half crosswise so that all pieces are similar in size
  7. Cut each of these pieces into four parts
  8. Heat a non-stick skillet over medium heat
  9. Add a drizzle of olive oil and arrange the zucchini pieces with the cut side facing down
  10. Sear for about 2 minutes until golden
  11. Lightly crush the coriander seeds in a mortar and pestle to release the aroma
  12. Flip the batons with the help of tongs to brown the opposite side
  13. Add the coriander seeds
  14. Season with salt
  15. Add a little more olive oil
  16. Sauté for 1 more minute until the zucchini is tender and seasoned
  17. Finish by turning off the heat and incorporating the lemon juice
  18. Serve immediately
