Plantains can be found in the produce section of most supermarkets. Yellow cornmeal flakes (farinha de milho flocada) are usually in the international or Latin American aisle of larger supermarkets, or readily available at Latin American or Brazilian specialty stores. Butter, oil, salt, and pepper are standard pantry staples found in any grocery store.
Preparation method
- Trim the ends of the plantains and peel them
- Cut each plantain in half lengthwise
- Cut each half in half again lengthwise
- If the strips are too thick, cut them into three parts
- Slice each piece of plantain into cubes of approximately 1 cm
- Heat a large non-stick skillet over medium heat
- Add the oil to the skillet
- Place the chopped plantains in the skillet and season with a pinch of salt
- Sauté the plantains for about 6 minutes, stirring occasionally, until lightly caramelized
- The time may vary depending on the ripeness of the plantain

- Lower the heat
- Add the butter cubes to the skillet and stir until completely melted
- Season with 1 teaspoon of salt and black pepper to taste
- Add the cornmeal flakes gradually, mixing continuously with a spatula to incorporate well
- Cook for another 4 minutes, stirring constantly, until the farofa is crunchy and well-browned
- Turn off the heat and serve the farofa immediately
