12 ears of fresh green corn with husks
1 cup of water
2 cups of sugar
1 cup of finely grated coconut
1 pinch of salt

Where to find ingredients

Fresh corn on the cob with husks can be found at local farmers' markets or produce sections of grocery stores. Grated coconut is typically available in the baking or international foods aisle.

Preparation method

  1. Carefully remove the husks from the corn and set them aside to use as wrappers
  2. Grate the corn kernels or cut them close to the cob
  3. Place the kernels in a blender with the water and process until smooth
  4. Transfer the mixture to a bowl
  5. Stir in the grated coconut, sugar, and salt
  6. Mix well until everything is incorporated
  7. Spoon the mixture into the corn husks
  8. Fold and tie the husks tightly with kitchen twine or thin strips of husk
  9. Bring a large pot of water to a rolling boil
  10. Ensure the water is at a full boil before adding the pamonhas
  11. Carefully submerge the pamonhas one by one into the boiling water
  12. Boil for approximately 40 minutes
  13. Remove the pamonhas from the water using a slotted spoon
  14. Allow them to cool in a cool, well-ventilated area before serving
