Classic Ground Beef Pastel Filling

Ingredients

2 tablespoons oil
1 medium onion, chopped
3 cloves garlic, minced
500g ground beef
1 tomato, seeded and chopped
Salt to taste
Black pepper to taste
Chopped fresh parsley and scallions

Where to find ingredients

You can find all these fresh ingredients at your local supermarket, neighborhood grocery store, or farmer's market.

Preparation method

  1. Heat the oil in a pan over medium heat
  2. Sauté the onion and garlic until they start to turn slightly golden
  3. Add the ground beef to the pan
  4. Stir continuously to break up any clumps and allow the meat to brown evenly
  5. Add the chopped tomato to the mixture
  6. Cook while stirring occasionally until all the moisture from the mixture has completely evaporated
  7. Season with salt and black pepper
  8. Adjust to your taste
  9. Turn off the heat and stir in the chopped fresh parsley and scallions
  10. Wait for the filling to cool down completely before filling the pastéis to ensure the dough remains intact

Observations

The main goal for this filling is to keep it quite dry, preventing excess moisture from the meat from compromising the crispness of the pastry dough during frying. The secret is to sauté the mixture until all the liquid has evaporated completely before finishing the preparation.
