Ingredients

1 cup sugar (for caramel)
1/2 cup water (for caramel)
3 eggs
8 tablespoons sugar
4 tablespoons all-purpose flour
1/2 liter boiling milk

Method

  1. Preheat oven to maximum temperature
  2. Place a baking pan with about two inches of cold water inside the oven
  3. In a saucepan, combine the sugar and water for the caramel and cook over low heat until dissolved
  4. Avoid stirring the caramel with a spoon after cooking begins
  5. Remove the caramel from heat as soon as it reaches a dark golden color
  6. Pour the caramel evenly over the entire pudding mold, including the central cone, and set aside
  7. Beat the eggs with the sugar in a blender for about 5 minutes until a light and voluminous mixture is obtained
  8. Gradually add the all-purpose flour, a tablespoon at a time, with the blender running
  9. Incorporate the boiling milk gradually and continue blending the batter for another 2 minutes
  10. Pour the liquid mixture into the caramelized mold
  11. Place the pudding mold inside the baking pan with water, which will already be boiling in the oven
  12. Bake for 50 minutes to one hour until the surface is golden brown
  13. Perform the toothpick or knife test to check for doneness
  14. it should come out clean when inserted
  15. Unmold the pudding while still hot to prevent the caramel from hardening and to facilitate removal from the mold

Notes

This pudding has a firmer texture than versions made with condensed milk. The secret to a perfect unmolding is to remove it from the pan while it's still warm, ensuring the caramel sauce remains fluid and the dessert doesn't dry out.
