1/2 cup water (for caramel)

8 tablespoons sugar
4 tablespoons all-purpose flour
1/2 liter boiling milk
Where to find ingredients
Ingredients can be found at most grocery stores. Baking pans and molds are available at kitchen supply stores and department stores.
Method
- Preheat oven to maximum temperature
- Place a baking pan with about two inches of cold water inside the oven
- In a saucepan, combine the sugar and water for the caramel and cook over low heat until dissolved
- Avoid stirring the caramel with a spoon after cooking begins
- Remove the caramel from heat as soon as it reaches a dark golden color
- Pour the caramel evenly over the entire pudding mold, including the central cone, and set aside
- Beat the eggs with the sugar in a blender for about 5 minutes until a light and voluminous mixture is obtained
- Gradually add the all-purpose flour, a tablespoon at a time, with the blender running
- Incorporate the boiling milk gradually and continue blending the batter for another 2 minutes
- Pour the liquid mixture into the caramelized mold
- Place the pudding mold inside the baking pan with water, which will already be boiling in the oven
- Bake for 50 minutes to one hour until the surface is golden brown
- Perform the toothpick or knife test to check for doneness
- it should come out clean when inserted
- Unmold the pudding while still hot to prevent the caramel from hardening and to facilitate removal from the mold
Notes
This pudding has a firmer texture than versions made with condensed milk. The secret to a perfect unmolding is to remove it from the pan while it's still warm, ensuring the caramel sauce remains fluid and the dessert doesn't dry out.
