Brazilian Beef and Rice (Arroz à Carreteiro)

Ingredients

800 g salted dried beef (charque), chopped
2 tablespoons lard
1 onion, chopped
2 cloves garlic, chopped
2 cups rice
5 cups boiling water
Fresh green herbs (parsley/scallions), to taste

Where to find ingredients

Salted dried beef can be found in the international section of well-stocked supermarkets, Latin American specialty grocers, or meat markets under the name 'carne seca' or 'tasajo'.

Preparation

  1. Soak the salted beef in water ahead of time
  2. Change the water several times to remove excess salt
  3. Heat the lard in a large pot
  4. Sauté the onion and garlic until golden
  5. Add the chopped salted beef and fry well
  6. Add the rice and sauté with the meat while stirring constantly
  7. Pour in the boiling water
  8. Reduce the heat and cook until the rice is tender
  9. Finish by sprinkling with chopped green herbs just before serving

Notes

This dish is a legacy of ancient cattle drivers who needed a nutritious and easy-to-carry meal during long expeditions. The secret lies in perfectly sautéing the salted beef, which gives the recipe its distinct character.
