Where to find ingredients
Dried salted beef (charque) can usually be found in the international or specialty sections of larger supermarkets, or in Latin American or Brazilian markets. If unavailable, very salty beef jerky (unsweetened and unseasoned) can be a substitute, but it will require thorough rinsing and soaking to reduce the saltiness. Lard can be found in the baking aisle or international sections of supermarkets. Fresh herbs for green seasoning are widely available in supermarkets and at fresh markets.
Preparation method
- Soak the dried salted beef in water in advance
- Change the water several times to remove excess salt
- Heat the lard in a large pot
- Sauté the onion and garlic until golden
- Add the chopped dried salted beef and fry well
- Add the rice and sauté it with the meat, stirring constantly
- Pour in the boiling water
