Homemade Black-Eyed Peas with Smoked Sausage

Ingredients

1 kg black-eyed peas
1/2 kg fresh bacon
1/2 kg smoked sausage (linguica calabresa style)
1 large onion
1 bunch fresh cilantro (coriander)
1 bunch fresh parsley
1/2 kg medium cassava flour
Complete Bahian seasoning, to taste (no chili)
Salt to taste
Black pepper to taste

Preparation method

  1. Cook the black-eyed peas in a pressure cooker for approximately 9 minutes after it starts to hiss, or until tender
  2. While the peas are cooking, chop the fresh bacon into small cubes
  3. Chop the onion, cilantro, and parsley
  4. Slice or cube the smoked sausage
  5. In a separate pan, fry the bacon until golden and set aside
  6. In the same pan used for the bacon, fry the smoked sausage and set aside
  7. In a large pot, add a little of the rendered bacon fat
  8. Sauté the chopped onion until translucent
  9. Add the chopped cilantro and parsley and sauté for another minute
  10. Add the Bahian seasoning, salt, and black pepper to taste, mixing well
  11. Drain the cooked black-eyed peas and add them to the pot with the sautéed seasonings
  12. Gently mix to incorporate the seasonings into the peas
  13. Add the fried bacon and smoked sausage to the pot with the peas
  14. Gradually add the cassava flour, stirring constantly, until a firm and homogeneous consistency is achieved
  15. Taste and adjust salt if necessary
  16. Serve the black-eyed peas hot
