- Season the chicken pieces with salt and black pepper to taste.
- In a large pot, heat the oil or olive oil over medium heat.
- Brown the chicken pieces on all sides.
- Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion and sauté until translucent.
- Add the minced garlic and chopped green bell pepper (if using) and sauté for another 2 minutes.
- Add the chopped tomatoes and cook until they begin to break down.

Observations
Galinhada is a beloved dish in Brazil, renowned for the delicious marriage of tender chicken with flavor-infused rice. Prepared in many regions throughout the country, it is the perfect centerpiece for a special Sunday lunch or a communal meal, offering a hearty and authentic dining experience.
To achieve a perfect result, the secret lies in using quality ingredients and slow-cooking, allowing all the seasonings to meld beautifully. Turmeric or annatto provides a vibrant color and distinct aroma, while aromatics like onion, garlic, and fresh herbs elevate the overall taste. While you can customize the dish with additional vegetables, the traditional preparation is already a true delight on its own.
