Method
- Blend the papaya, orange juice, and sweetener in a blender until smooth
- Hydrate the gelatin in a tablespoon of cold water and let it rest for five minutes
- Heat the heavy cream and add the hydrated gelatin
- Stir well to dissolve completely
- Incorporate this mixture into the blended papaya mixture
- Gently fold the whipped egg white into the mixture
- Divide the batter into individual molds
- Refrigerate for about six hours until firm
- Prepare the accompanying sauce by heating the water with the honey
- Let the syrup cool completely
- Mix the skim yogurt into this cooled syrup
- Unmold the Bavarian cream and serve with the yogurt sauce around it
