Lentil and Spinach Soup

Ingredients

1 cup (tea) lentils
1/2 bunch spinach
1 onion
1/2 carrot (or 1/3 cup grated)
1 stalk celery (or 1/4 cup chopped)
2 cloves garlic
1 liter water
Olive oil
1 teaspoon cumin
1 teaspoon turmeric
1 bay leaf
Salt and freshly ground black pepper to taste
Crispy bacon bits to garnish (optional)

You can find fresh produce, dry lentils, and spices at any local grocery store or farmers market. Crispy bacon bits can be purchased in the pantry or meat section of most supermarkets.

Method

  1. Clean the spinach leaves in a bowl of water with a food-safe vegetable sanitizer for 15 minutes
  2. Finely chop the onion and garlic
  3. Grate the carrot using the coarse side of a grater
  4. Cut the celery into small cubes, discarding the leaves
  5. Heat a pressure cooker over medium heat with a tablespoon of olive oil
  6. Sauté the onion with a pinch of salt until golden
  7. Add another tablespoon of olive oil and sauté the carrot and celery for 2 minutes
  8. Add the garlic and the bay leaf
  9. Add the cumin and turmeric and sauté for 1 minute to release the aromas
  10. Incorporate the lentils into the pot
  11. Pour in the water gradually and use a spoon to scrape the bottom of the pot
  12. Season with salt and pepper
  13. Close the pressure cooker lid and cook over high heat
  14. Once the pot reaches pressure, reduce the heat and cook for 5 minutes
  15. Turn off the heat and wait for all the steam to release before opening the lid
  16. Rinse the spinach and mix the leaves into the soup
  17. Cook uncovered over medium heat for another 2 minutes until the spinach is tender
  18. Adjust salt if necessary
  19. Serve with a drizzle of olive oil and crispy bacon bits
