Where to find ingredients
Shrimp can be found at seafood markets or the seafood counter of most grocery stores. Cassava is often available in Latin American or international food sections of supermarkets. Coconut milk, tomato sauce, olive oil, palm oil, and other pantry staples are widely available at grocery stores.
Method
- Wash the shrimp thoroughly
- Season them with salt, garlic, pepper, and lime juice
- Let marinate for a few minutes
- Cook the cassava in a pot with water, the bay leaf, and the sliced onion
- When the cassava is very tender, add one can of coconut milk
- Let the mixture cool slightly and blend everything in a blender until smooth
- Heat the olive oil in a pan and sauté the grated onion until golden
- Add the seasoned shrimp and cook until they change color
- Add the tomato sauce, chopped green herbs, and bell peppers
- Cook for a few minutes
- Incorporate the blended cassava cream, the second can of coconut milk, and the palm oil
