450 g peeled and cooked potatoes

Potatoes, butter, eggs, salt, pepper, and nutmeg can be found at most grocery stores. All-purpose flour is also a pantry staple available at supermarkets.
Preparation method
- Peel the potatoes and place them in a pot with water
- Bring to a boil over high heat
- Add salt and cook for approximately 20 minutes or until tender
- Drain all the water and pass the potatoes through a masher
- Thoroughly mix the butter and egg yolks into the mashed potatoes
- Season with salt, black pepper, and nutmeg, stirring to incorporate the flavors
- Transfer the dough to a piping bag fitted with a large star tip
- Preheat the oven to 180°C (350°F)
- Grease a baking sheet with butter and dust with flour
- Pipe potato roses onto the baking sheet by pressing the piping bag
- Start in the center and make a spiral motion to form the rose shape
- Leave space between each piped portion on the baking sheet
- Bake in the preheated oven for about 30 minutes or until the surface is lightly golden
- Remove from the oven and serve immediately

These puffs have a soft texture and a delicate shape, making them ideal for main courses or as a snack. Using a piping bag ensures an elegant and uniform presentation.
