Preparation method
- Carefully remove the husks from the corn and set them aside to use as wrappers
- Grate the corn kernels off the cobs or cut them close to the cob
- Place the corn kernels and water into a blender and process until smooth
- Pour the mixture into a bowl and stir in the coconut, sugar, and salt
- Take a reserved corn husk and form it into a small pouch or cup
- Fill the husk with the corn mixture and tie it securely with kitchen twine or thin strips of the husk
- Bring a large pot of water to a rolling boil
- Carefully lower the prepared corn pouches into the boiling water one by one
- Ensure the water remains at a steady boil throughout the process so the pouches hold their shape
- Cook for approximately 40 minutes
- Remove the corn pouches from the water using a slotted spoon
- Place them in a cool spot to firm up and cool down before serving
Observations
Serve warm or at room temperature with a fresh cup of coffee.
