Where to find ingredients
Rice, eggs, flour, and common herbs like parsley, cilantro, and chives are readily available in most supermarkets in the produce and pantry sections. Vegetable oil is also a standard supermarket item. Salt is a common pantry staple. For these ingredients, a regular supermarket should suffice. If you are looking for specific varieties or bulk quantities, specialty international food stores or local farmers' markets might be good options.
Preparation method
- Cook the rice in salted water until very soft
- Drain excess water, if any
- In a blender, process the cooked rice with the egg, parsley, cilantro, and chopped chives until a homogeneous mixture is obtained
- Transfer the mixture to a saucepan
- Gradually add the flour, mixing
- Place the saucepan over low heat, cooking the dough while stirring constantly, until it completely detaches from the bottom of the pan, forming a ball
- Season with salt to taste
- Remove the dough from the pan and let it cool slightly
- On a clean, lightly floured surface, shape the dough into a roulade about 2 cm in diameter
- Cut the gnocchi into pieces approximately 2 cm long
- In a large pot, boil plenty of salted water with about 4 tablespoons of oil
- Add the gnocchi to the boiling water, a few at a time, to prevent sticking
- Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked
- Drain the cooked gnocchi and, if desired, finish by sautéing them in a skillet with the remaining vegetable oil or serve directly with your preferred sauce
Observations
Rice gnocchi is an interesting variation of traditional Italian pasta, adapted to Brazilian palates and using rice as the base. This homemade recipe is an excellent option for those looking for a different, flavorful, and relatively easy-to-prepare dish. The combination of cooked rice with egg, fresh seasonings, and wheat flour results in soft gnocchi with a special touch, perfect for serving with your favorite sauce.
