Where to find ingredients
Rice, eggs, flour, and standard pantry staples like salt and vegetable oil are widely available in the international or domestic aisles of most supermarkets. Fresh herbs like parsley, cilantro, and green onions can be found in the produce section of any grocery store. For Brazilian or Latin specialty ingredients, check dedicated Latin American or international food markets.
Preparation method
- Cook the rice in salted water until very soft
- Drain any excess water
- In a blender, blend the cooked rice with the egg, parsley, cilantro, and chopped green onion until smooth
- Transfer the mixture to a saucepan
- Gradually add the wheat flour, mixing as you go
- Place the saucepan over low heat, cooking the dough while stirring constantly, until it pulls away completely from the bottom of the pan, forming a ball
- Season with salt to taste
- Remove the dough from the pan and let it cool slightly
- On a clean, lightly floured surface, shape the dough into a log about 2 cm in diameter
- Cut the gnocchi into pieces approximately 2 cm long
- In a large pot, boil plenty of water with salt and about 4 tablespoons of oil
- Add the gnocchi to the boiling water, a few at a time, to prevent sticking
- Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked
- Drain the cooked gnocchi and, if desired, finish by sautéing them in a pan with the remaining vegetable oil or serve directly with your favorite sauce
Observations
