Where to find ingredients
Okra, bell peppers, onions, garlic, canned tomatoes, and spices can be found in the produce and pantry sections of most supermarkets. Olive oil and salt are also widely available.
Preparation method
- Wash the okra and dry them carefully with a clean kitchen towel
- Cut off the ends and slice each okra diagonally into 1 cm pieces
- Set aside the sliced okra
- Finely chop the onion and garlic
- Cut the bell pepper in half, remove the seeds, and dice half of it into 1 cm cubes
- Lightly crush the cumin seeds in a mortar to release their aroma
- Heat a medium pot over medium heat with the olive oil
- Add the onion and bell pepper
- Season with a pinch of salt and sauté for 3 minutes until the vegetables soften
- Add the garlic and crushed cumin
- Stir everything for 1 minute until fragrant
- Pour in the water and mix well to deglaze the pot
- Incorporate the diced peeled tomatoes with their liquid
- Season with 1 teaspoon of salt and pepper to taste
- Bring the mixture to a boil over medium heat
- Reduce the heat and cook for 5 minutes, stirring occasionally until the sauce thickens
- Add the sliced okra to the pot
- Cook for another 6 minutes, stirring occasionally, until the okra is tender-crisp
- Avoid overcooking so the okra maintains its ideal texture
- Serve immediately
