Where to find ingredients
Rice, eggs, flour, parsley, cilantro, chives, salt, vegetable oil can be found in most supermarkets. Water is readily available from your tap.
Preparation method
- Cook the rice in salted water until very soft
- Drain any excess water
- In a blender, process the cooked rice with the egg, parsley, cilantro, and chives until smooth
- Transfer the mixture to a saucepan
- Gradually add the wheat flour, mixing well
- Place the saucepan over low heat, stirring constantly, until the dough pulls away from the bottom of the pan, forming a ball
- Season with salt to taste
- Remove the dough from the pan and let it cool slightly
- On a clean, lightly floured surface, shape the dough into a log about 2 cm in diameter
- Cut the logs into pieces approximately 2 cm long
- In a large pot, boil plenty of salted water with about 4 tablespoons of oil
- Add the gnocchi to the boiling water a few at a time to prevent sticking
- Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked
- Drain the cooked gnocchi and, if desired, finish by sautéing them in a skillet with the remaining vegetable oil or serve directly with your favorite sauce
