Roasted Cassava

Ingredients

1.5 kg cassava (or 1.2 kg if already peeled)
3 tablespoons olive oil
Salt to taste
Freshly ground black pepper to taste

Preparation method

  1. Preheat oven to 220 ºC (425 ºF)
  2. Peel the cassava
  3. Cut into large pieces approximately 8 cm (3 inches)
  4. Wash the pieces well under running water
  5. Place the cassava in the pressure cooker
  6. Cover with water, not exceeding two-thirds of the pot's capacity
  7. Cover and place over high heat
  8. As soon as the pot starts to whistle
  9. Reduce heat and count 5 minutes
  10. The ideal point is tender yet firm enough to be cut
  11. Turn off the heat
  12. Wait for the pressure to release completely before opening
  13. Drain the water well in a colander
  14. Let it cool slightly to handle
  15. Grease a large baking sheet with half of the olive oil
  16. Cut the cassava pieces in half lengthwise
  17. Divide each half into sticks about 2 cm (0.75 inch) thick
  18. Arrange the sticks on the baking sheet without overlapping
  19. Drizzle with the remaining olive oil
  20. Season with salt and pepper to taste
  21. Place in the oven for approximately 40 minutes
  22. Turn the sticks halfway through the cooking time so they brown evenly
  23. Remove from the oven and serve immediately
