Where to find ingredients
Fresh corn can be found in the produce section of most supermarkets. Milk, flour, eggs, and Parmesan cheese are standard grocery items available in dairy and baking aisles.
Preparation method
- Wash the corn ears thoroughly and remove all silk
- Cut the kernels off the ears using a knife and set aside in a bowl
- Place the corn kernels and milk in a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the pulp
- Transfer the liquid to a saucepan and cook over low heat
- Stir constantly until thickened to prevent lumps from forming
- Transfer the cream to an oven-safe dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with lightly floured hands
- Shape the dough into long cylinders on a lightly floured surface
- Cut the cylinders into small pieces, the traditional gnocchi size
- Cook the pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and arrange in a serving dish
- Cover with your preferred sauce
- Finish by sprinkling grated Parmesan cheese on top
- Place in the oven just long enough to gratinate and brown
Observations
This recipe uses fresh corn to create a light and delicious dough. The secret is constant stirring to reach the ideal dough consistency before shaping and finishing in the oven.
