Traditional Chicken and Rice (Galinhada)

Ingredients

1 whole chicken, cut into medium pieces
4 tablespoons oil or olive oil
Salt to taste
Black pepper to taste
1 large onion, chopped
3 cloves garlic, minced
1/2 green bell pepper, chopped (optional)
2 tomatoes, peeled, seeded, and chopped
1/2 teaspoon turmeric powder or 2 sachets of powdered seasoning with turmeric
2 cups rice
4 cups hot water
1/4 cup chopped fresh parsley and scallions

Where to find ingredients

Find fresh poultry, vegetables, and rice at local markets or neighborhood grocery stores. Annatto (urucum) can be sourced at specialized spice shops if turmeric is not your preference.

Preparation method

  1. Season the chicken pieces with salt and black pepper to taste.
  2. Heat the oil or olive oil in a large pot over medium heat.
  3. Brown the chicken pieces on all sides.
  4. Remove the chicken from the pot and set aside.
  5. In the same pot, add the chopped onion and sauté until translucent.
  6. Add the minced garlic and chopped green bell pepper (if using) and sauté for 2 more minutes.
  7. Add the chopped tomatoes and cook until they begin to break down.
  8. Stir in the turmeric powder or powdered seasoning, mixing well.
  9. Return the chicken pieces to the pot and coat them with the sautéed mixture.
  10. Add the rice and mix well, coating the grains in the mixture for about 1 minute.
  11. Pour in the hot water and adjust the salt if necessary.
  12. Once it boils, reduce the heat, cover the pot, and cook for approximately 15 to 20 minutes, or until the rice is cooked and the water has been absorbed.
  13. Check that the chicken is thoroughly cooked through.
  14. Turn off the heat and stir in the chopped fresh parsley and scallions.
  15. Let the dish rest, covered, for 5 minutes before serving.

Observations

Galinhada is a beloved dish across the country, celebrated for the delicious combination of succulent chicken and aromatic rice. It is prepared in many regions and serves as an ideal choice for a special Sunday lunch or a large family gathering, providing a hearty and flavorful meal.

To achieve the perfect results, using quality ingredients and slow-cooking the components is key to allowing the flavors to meld together. Turmeric or annatto powder provide a vibrant color and distinctive aroma, while essential aromatics like onion, garlic, and fresh herbs enhance the overall depth of the dish. While you can experiment with extra vegetables, the traditional preparation stands perfectly on its own.
