Creamy and Easy Shrimp Broth

Ingredients
1/2 kg fresh shrimp
300 g cassava (yuca/manioc)
1 small can coconut milk
1 envelope powdered seasoning (flavor of choice)
5 tablespoons annatto powder
2 teaspoons salt (or to taste)
2 teaspoons monosodium glutamate (optional)
1/2 cup vegetable oil or 1 margarine stick (100 g)
1/2 cup brandy
Chopped garlic to taste

Where to find ingredients
Fresh shrimp can be found at seafood markets or the seafood counter of your local grocery store. Cassava is available at Latin American or specialty food stores. Coconut milk and annatto powder are commonly found in the international aisle of most supermarkets.
Preparation method
- Wash the shrimp thoroughly
- In a saucepan, heat the oil or margarine over medium heat
- Brown the whole shrimp with the heads in the hot fat until they are very red
- Remove the shrimp from the pan and set aside on a plate to cool
- Peel the cassava, cut into pieces, and place in the blender
- Add the coconut milk to the blender
- Add the browned shrimp heads to the blender
- Separate 250 g of the cooked shrimp (peeled and without heads) and add to the blender
- Add 1/2 liter of water to the blender and blend until smooth
- In the same pan where you fried the shrimp, add chopped garlic and sauté until golden
- Add the powdered seasoning, annatto powder, salt, and monosodium glutamate, if using
- Sauté the seasonings for a few moments
- Pour the blended mixture from the blender into the pan with the sautéed seasonings
- Stir well and add more water if necessary to adjust consistency, avoiding it becoming too thick
- Cook for about 15 minutes over low heat, stirring occasionally
- At the end of cooking, add the brandy, mix, and remove from heat
