Preparation method
- Place the guava pulp, honey, and water into a large saucepan
- Bring to medium-high heat and wait for it to boil
- Reduce the heat to maintain a gentle simmer for 10 minutes
- Stir the contents occasionally and remove the foam that forms on top using a spoon
- Transfer the cooked mixture to a blender
- Pulse at low speed just to process the pulp without crushing the hard seeds
- Pass the puree through a fine-mesh sieve placed over a bowl
- Use a wooden spoon to press the mixture and extract all the liquid while retaining the seeds and excess pulp in the sieve
- Discard the seeds and pulp left in the sieve
- Finish by incorporating lemon juice into the strained puree
