Preparation
- Place the guava pulp, honey, and water in a large saucepan
- Bring the mixture to a boil over medium-high heat
- Reduce the heat to maintain a gentle simmer for 10 minutes
- Stir the contents occasionally
- Remove any foam that forms on the top using a spoon
- Transfer the cooked mixture to a blender
- Pulse on low speed just enough to process the pulp without crushing the hard seeds
- Pass the purée through a fine-mesh sieve set over a bowl
- Use a wooden spoon to press the mixture and extract all the liquid
- Keep the seeds and leftover pulp in the sieve
- Discard the seeds and remaining fiber left in the sieve
- Finish by stirring the lemon juice into the strained purée
