¾ cup honey
1 cup water

Preparation

  1. Place the guava pulp, honey, and water in a large saucepan
  2. Bring the mixture to a boil over medium-high heat
  3. Reduce the heat to maintain a gentle simmer for 10 minutes
  4. Stir the contents occasionally
  5. Remove any foam that forms on the top using a spoon
  6. Transfer the cooked mixture to a blender
  7. Pulse on low speed just enough to process the pulp without crushing the hard seeds
  8. Pass the purée through a fine-mesh sieve set over a bowl
  9. Use a wooden spoon to press the mixture and extract all the liquid
  10. Keep the seeds and leftover pulp in the sieve
  11. Discard the seeds and remaining fiber left in the sieve
  12. Finish by stirring the lemon juice into the strained purée
