Ingredients

2.5 liters cold water
500 g green beans
2 beef bouillon cubes
3 tablespoons vegetable oil
1 smoked sausage, sliced
1 grated onion
1 crushed garlic clove
0.5 tablespoon chopped cilantro
2.5 cups white rice
150 g coalho cheese, thinly sliced

Preparation method

  1. Soak the green beans in water overnight
  2. The next day, drain the beans and cook them in a pot with 2.5 liters of cold water and the beef bouillon cubes
  3. Cover the pot and cook over low heat for approximately 1 hour, or until the beans are tender
  4. While the beans are cooking, heat the oil in another pot
  5. Sauté the smoked sausage, grated onion, and crushed garlic in the oil until golden
  6. Add the rinsed and drained rice and chopped cilantro to the sautéed mixture, and stir-fry well for a few minutes
  7. Add the cooked beans with their cooking liquid to the rice mixture
  8. Stir all ingredients together, cover the pot, and cook over low heat until the rice is cooked and the mixture is moist and creamy
  9. Distribute the slices of coalho cheese over the rice
  10. Cover the pot again and let the steam melt the cheese for a few minutes
  11. Serve the Baião de Dois hot, optionally with fried or roasted sun-dried beef
