Ingredients

2.5 liters cold water
500 g green beans
2 beef bouillon cubes
3 tablespoons vegetable oil
1 cured sausage (like 'paio'), sliced
1 grated onion
1 mashed garlic clove
1/2 tablespoon chopped cilantro
2.5 cups white rice
150 g 'queijo coalho' (firm white cheese), thinly sliced

Preparation method

  1. Soak the green beans in water overnight
  2. The next day, drain the beans and cook them in a pot with 2.5 liters of cold water and the beef bouillon cubes
  3. Cover the pot and cook over low heat for approximately 1 hour, or until the beans are tender
  4. While the beans are cooking, heat the oil in another pot
  5. Sauté the sliced cured sausage, grated onion, and mashed garlic in the oil until browned
  6. Add the rinsed and drained rice and the chopped cilantro to the sautéed mixture, and stir-fry well for a few minutes
  7. Combine the cooked beans with their cooking liquid into the rice mixture
  8. Mix all ingredients, cover the pot, and cook over low heat until the rice is cooked and the mixture is moist and creamy
  9. Arrange the slices of 'queijo coalho' over the rice
  10. Cover the pot again and let the steam melt the cheese for a few minutes
  11. Serve the Baião de Dois hot, with fried or roasted dried beef, if desired
