Ingredients

1 kg salted cod (bacalhau)
1/2 kg potatoes
1/2 kg carrots
2 large onions
2 ripe red tomatoes
1 bell pepper
Olives to taste
Minced garlic to taste
Chopped cilantro to taste
1 tbsp tomato paste
Coconut milk to taste
Olive oil to taste
2 cups milk
1 1/2 tbsp all-purpose flour
1 tbsp butter
1 egg
1/2 cup heavy cream
Nutmeg to taste
Black pepper to taste
Salt to taste

Method

  1. Soak the salted cod in water for 24 hours
  2. Change the water regularly to remove excess salt
  3. Boil the cod briefly
  4. Discard the skin and bones
  5. Reserve the cooking water
  6. Separate the fish into flakes
  7. Season the cod flakes with garlic, salt, and cilantro
  8. Sauté the sliced onions in a pan with a little olive oil
  9. Add the chopped tomatoes (peeled and deseeded), the bell pepper, and the olives
  10. Mix in the cod, tomato paste, coconut milk, and a little of the reserved cooking water
  11. Cook until the sauce thickens
  12. Adjust the salt if necessary
  13. Boil the sliced potatoes and carrots until tender
  14. For the white sauce, blend the milk, flour, and melted butter in a blender
  15. Transfer to a pan and cook over medium heat, stirring constantly until it thickens
  16. Finish the white sauce by stirring in the heavy cream, nutmeg, black pepper, salt, and beaten egg
  17. Rub a garlic clove over the inside of a large baking dish and grease it with olive oil
  18. Assemble the dish by alternating layers of cod, potatoes, and carrots
  19. Pour the white sauce evenly over the top
  20. Bake until golden and bubbly
  21. Decorate with olives and parsley before serving alongside white rice
