2 kg large shrimp with shells (or 1 kg peeled)
Juice of 2 limes
Salt to taste
5 cloves garlic, crushed
1 small can extra virgin olive oil
2 medium onions, chopped
4 tomatoes, peeled, seeded, and chopped
1 ½ tablespoons annatto powder (colorau)
1 small can (520 g) tomato sauce with basil and parsley flavor
2 tablespoons beef-flavored seasoning powder
15 basil leaves, chopped
200 g butter
250 g cream cheese
1 can (approx. 300g) evaporated milk
2 tablespoons cornstarch
2 bunches cilantro, chopped
2 bunches scallions, chopped

Preparation method
- Wash the shrimp well and marinate in lime juice and salt for about 20 minutes
- Rinse the shrimp again and drain completely

- Cook until the onion softens
- Stir in the tomato sauce, seasoning powder, and chopped basil
- Add the butter and shrimp to the pot
- Cook over low heat for approximately 30 minutes, stirring occasionally
- Add the cream cheese and cook for about 10 minutes, stirring until the sauce thickens
- If necessary, dissolve the cornstarch in a little of the liquid removed from the pot and add to the mixture, cooking for another 3 minutes
- Add the chopped cilantro and scallions
- Turn off the heat and stir in the evaporated milk
- Mix gently until a homogeneous cream is obtained
