Creamy Shrimp Casserole

Ingredients

2 kg large shrimp with shells (or 1 kg peeled)
Juice of 2 limes
Salt to taste
5 cloves garlic, crushed
1 small can extra virgin olive oil
2 medium onions, chopped
4 tomatoes, peeled, seeded, and chopped
1 ½ tablespoons annatto powder (colorau)
1 small can (520 g) tomato sauce with basil and parsley flavor
2 tablespoons beef-flavored seasoning powder
15 basil leaves, chopped
200 g butter
250 g cream cheese
1 can (approx. 300g) evaporated milk
2 tablespoons cornstarch
2 bunches cilantro, chopped
2 bunches scallions, chopped

  11. Add the chopped cilantro and scallions
  12. Turn off the heat and stir in the evaporated milk
  13. Mix gently until a homogeneous cream is obtained
