Where to find ingredients
Milk, butter, salt, all-purpose flour, ham, mozzarella cheese, eggs, breadcrumbs, and frying oil are commonly found in most major supermarkets in the dairy, pantry, deli, and oils sections. Specialty Brazilian or Latin American markets may offer a wider variety of ham and cheese options.
Preparation method
- In a saucepan, boil the milk with the butter and salt
- When the mixture comes to a boil, add the 2 cups of all-purpose flour all at once
- Stir vigorously with a spoon until a homogeneous dough forms
- Continue cooking over low heat, kneading the dough in the same pan, until it detaches from the bottom
- Transfer the dough to a clean, smooth surface, like a sink or countertop, and knead it well while it's still warm
- Open the dough with your hands or a rolling pin, to a thin thickness
- Using the rim of a glass, cut circles out of the dough
- Place a portion of chopped ham and chopped mozzarella in the center of half of the circles
- Cover with the remaining circles, pressing the edges to seal and form the risoles
- Dip each risole in the beaten eggs, then in the breadcrumbs, ensuring they are well coated
- Heat enough oil in a frying pan and fry the risoles until golden brown on all sides
- Remove the fried risoles with a slotted spoon and place them on paper towels to drain excess oil
