Where to find ingredients
Rice, eggs, flour, and basic seasonings like salt, parsley, cilantro, and chives can be found in the staple sections of most supermarkets. Vegetable oil is also a common supermarket item. If you're looking for specific varieties of rice or fresh herbs, check the produce aisle or consider local farmer's markets. Specialty Latin or Brazilian markets might offer a wider selection of herbs and sometimes unique rice varieties.
Preparation method
- Cook the rice in salted water until very soft
- Drain any excess water
- In a blender, blend the cooked rice with the egg, parsley, cilantro, and chopped chives until a homogeneous mixture is obtained
- Transfer the mixture to a saucepan
- Gradually add the all-purpose flour, mixing
- Place the saucepan over low heat, cooking the dough while stirring constantly, until it completely pulls away from the bottom of the pan, forming a ball
- Season with salt to taste
- Remove the dough from the pan and let it cool slightly
- On a clean, lightly floured surface, shape the dough into a log about 2 cm in diameter
- Cut the gnocchi into pieces approximately 2 cm long
- In a large pot, boil plenty of salted water with about 4 tablespoons of oil
- Add the gnocchi to the boiling water, a few at a time, to prevent sticking
- Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked
- Drain the cooked gnocchi and, if desired, finish by sautéing them in a skillet with the remaining vegetable oil or serve directly with your favorite sauce
Observations
Rice gnocchi is an interesting variation of traditional Italian pasta, adapted to Brazilian tastes and using rice as a base. This homemade recipe is an excellent option for those looking for a different, tasty, and relatively easy-to-prepare dish. The combination of cooked rice with egg, fresh seasonings, and wheat flour results in soft gnocchi with a special touch, perfect to be served with your favorite sauce.
