Pan-Seared Pork Chops with Paprika and Sage

Ingredients

2 pork chops
1 tablespoon salt
1 teaspoon sugar
2 teaspoons paprika
2 bay leaves
2 cups water
4 sprigs fresh sage
1 tablespoon olive oil
Freshly ground black pepper to taste

Where to find ingredients

Pork chops and fresh herbs can be found at local butcher shops, neighborhood grocery stores, or the meat and produce sections of major supermarkets.

Preparation

  1. Place the pork chops in a medium bowl
  2. Spread the salt, sugar, and paprika over the meat
  3. Massage the spices into the pork to ensure flavor penetration
  4. Add the bay leaves and pour in the water until the meat is submerged
  5. Cover the container with a plate
  6. Let it marinate for 20 minutes at room temperature to hydrate the meat
  7. Remove the pork chops from the marinade using tongs
  8. Pat the pieces dry carefully with paper towels until all moisture is gone
  9. Place a large skillet over medium heat
  10. Pour in the olive oil once the surface is very hot
  11. Place the pork chops in the skillet, keeping space between them
  12. Sprinkle black pepper to taste
  13. Add the sage sprigs to the skillet next to the meat
  14. Sear for about 3 minutes on each side until browned
  15. Serve the dish immediately

Notes

This recipe uses a quick marinade to keep the meat tender during cooking. The combination of paprika, fragrant sage, and earthy bay leaves creates a balanced dish that is perfect for everyday cooking.
