Traditional Bahian Fish Moqueca

Ingredients
1 kg white fish (sea bass, dogfish, dorado) in steaks or cubes
Juice of 1 lime
3 cloves garlic, crushed
Salt to taste
2 large onions, cut into thick slices
3 ripe tomatoes, cut into thick slices
1 green bell pepper, cut into thick slices
1 bunch fresh cilantro, roughly chopped
200 ml coconut milk
½ cup dendê oil
Juice of 1 lime

Where to find ingredients
White fish is widely available at supermarkets and fish markets. Lime, garlic, onions, tomatoes, and bell peppers can be found in the produce section of any supermarket or local market. Fresh cilantro is also readily available in produce sections. Coconut milk is usually found in the international foods aisle of supermarkets or in specialty Asian or Latin markets. Dendê oil (palm oil) can be found in Latin, African, or Caribbean specialty markets, or in the international foods section of larger supermarkets. If dendê oil is unavailable, you can substitute with a good quality vegetable oil, though the flavor will be different.
Preparation method
- Season the fish steaks or cubes with lime juice, crushed garlic, and salt
- Let the fish marinate for at least 20 minutes
- In a clay pot or deep skillet, arrange half of the onion, tomato, and bell pepper slices to form a base
- Arrange the seasoned fish steaks over the vegetables
- Cover the fish with the remaining onion, tomato, and bell pepper slices
- Sprinkle half of the chopped cilantro over the vegetables and fish
- Drizzle evenly with dendê oil and then with coconut milk
- Cover the pot and place over medium heat
- Cook for approximately 20 minutes
- Check if the fish is cooked and tender, but not falling apart
- If necessary, continue cooking for another 5 to 10 minutes
- Finish by sprinkling the remaining chopped cilantro over the moqueca before serving hot
