Where to find ingredients
Cowpea beans (also known as black-eyed peas) are commonly found in the dried bean aisle of most supermarkets. Look for them in Latin or international food sections if your local supermarket has one. Fresh pork belly can be found at the meat counter of your supermarket or at a butcher shop. Smoked calabresa sausage, a type of smoked pork sausage, is often found in the deli section of larger supermarkets or specialty meat shops. Fresh herbs like parsley, scallions, and cilantro are available in the produce section of supermarkets and at fresh markets. Cassava flour (farinha de mandioca) can be found in the international or gluten-free sections of well-stocked supermarkets, or at Latin American or Brazilian specialty stores. Bahian seasoning (tempero baiano) is a spice blend and may be available in the international spice aisle of larger supermarkets or at specialty import stores; alternatively, you can create your own blend using common spices like garlic powder, onion powder, cumin, and turmeric, adjusting to your preference. Salt and black pepper are pantry staples available in any grocery store.
