Preparation method
- Season the chicken pieces generously with salt and black pepper.
- In a large heavy-bottomed pot, heat the oil or olive oil over medium heat.
- Sear the chicken pieces until they are golden brown on all sides.
- Remove the browned chicken from the pot and set aside.
- In the same pot, add the chopped onion and sauté until translucent.
- Add the minced garlic and the green bell pepper (if using) and sauté for another 2 minutes.
- Stir in the chopped tomatoes and cook until they begin to break down into a sauce.
- Add the turmeric or the seasoning powder, stirring well to combine.
- Return the chicken pieces to the pot, coating them thoroughly in the aromatic base.
- Stir in the rice, tossing well for about 1 minute until the grains are coated and translucent.
- Pour in the hot water and adjust the seasoning with salt if required.
- Once the liquid comes to a boil, reduce the heat to low, cover the pot tightly, and simmer for 15 to 20 minutes, or until the rice is tender and the liquid is absorbed.
- Check to ensure the chicken is thoroughly cooked through.
- Turn off the heat and stir in the freshly chopped parsley and spring onions (cheiro-verde).
- Let the Galinhada rest, covered, for 5 minutes before serving.
Observations
The secret to a truly exceptional Galinhada lies in sourcing quality ingredients and allowing the dish to simmer patiently, ensuring all the aromatics meld beautifully. Açafrão or colorau provides the signature golden hue and earthy fragrance, while a base of onions, garlic, and fresh herbs adds depth. While you can customize the recipe with extra vegetables, the traditional preparation remains a standout on its own.
