Tuna Stuffed Zucchini

4 medium zucchini
1 and 1/2 cups cooked rice
20 cherry tomatoes
1 can (drained) flaked tuna (preferably light)
1 teaspoon vegetable oil
1 clove garlic, minced
Salt to taste
Freshly ground black pepper to taste
